K.O. is Getting Sick

K.O. started to get very sick about the end of January.  This is a sweet picture of Knox sitting close to his mama as she was nearing the end of her life.

Another Great Birthday

 Another great birthday came around.  My sister, DeeAnne, had Dave go and track down some Ding Dongs to celebrate.  Joan brought flowers.  I had many sweet messages of love sent my way and it was a perfect day.  There was a USU activity that night and Dave surprised me with a great big chocolate cake and everyone sang. 

The Hunt Expo, Illusionists, Chicken Sandwiches and Logan with Bo

We had the best early spring break weekend trip.  Dave and I had planned on going to the Illusionists for Valentine's way back in October.  As February arrived, Mariah thought it would be fun to meet us so we grabbed her a ticket.  Then Dayton thought it would be awesome to go to the Hunting Expo so we decided to go out on Friday so he and Dave could go.  Then, Cado and Sav had nothing better to do and said they would happily join us, so we found two more tickets.  We enjoyed the show and were all spread out.  Afterward, we went to the famous chicken sandwich place that we have heard Sav and Cado talk about for so long.  It had a long line that we waited in and it was a tad cold.  But when we got in, we even got a seat!  That is a hidden miracle.  The sandwiches were truly delicious and as I look at this right now, I really want to go back.

After the Salt Lake adventure, we all (except Dayton) drove to Logan.  Bo had gone there to go skiing and so we all got to meet up and spend two nights with him.  It was just a great weekend, even though it was a lot colder than I had hoped.

Garlic Rosemary Bread

Ingredients:

  • 3 cups all-purpose flour
  • 3 large garlic cloves, minced
  • 1 tablespoon finely chopped fresh rosemary, or more, to taste
  • 1 1/4 teaspoons kosher salt
  • 3/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon active rapid rise yeast
  • 1 1/2 cups water, at room temperature
  • 2 tablespoons cornmeal

Directions:

  1. In a large bowl, combine flour, garlic, rosemary, salt, pepper and yeast.
  2. Using a wooden spoon or your hand, add water and mix until a wet, sticky dough forms, about 30 seconds.
  3. Cover bowl tightly with plastic wrap and let stand at room temperature until surface is dotted with bubbles, about 18 to 24 hours.
  4. Lightly oil a 10-inch cast iron skillet or coat with nonstick spray; sprinkle with cornmeal.
  5. Working on a lightly floured surface, gently shape dough into a round.
  6. Place dough into the prepared skillet. Cover with a clean dishtowel and let stand at room temperature until dough has doubled in size and does not readily spring back when poked with a finger, about 2 hours.
  7. Preheat oven to 450 degrees F. Place into oven and bake until golden brown, about 30-40 minutes.
  8. Serve warm

Eggs Benedict Quiche


INGREDIENTS

For shallow or regular 9 inch pie dish:
  • 1 unbaked pie crust 
  • 6 oz Canadian bacon or ham
  • 2 tbsp chopped fresh chives or green onion
  • 6 large eggs
  • 1 cup milk
  • 1/4 tsp salt
  • 1/4 tsp mustard 
  • 1/2 tsp black pepper
For a deep dish or large pie dish:
  • 1 unbaked pie crust to fit your pie plate
  • 8 oz Canadian bacon or ham
  • 3 tbsp chopped fresh chives or green onion
  • 9 large eggs
  • 1 1/2 cups milk
  • 1/2 tsp salt
  • 1/2 tsp mustard
  • 3/4 tsp black pepper
For the Blender Hollandaise Sauce:
  • 3 large egg yolks, room temperature
  • 1 tbsp freshly squeezed lemon juice
  • 1/4 tsp dijon mustard
  • 1/2 cup butter, melted

INSTRUCTIONS

  1. Preheat oven to 350° F. Roll unbaked pie crust to a 9″ pie dish.
  2. Cut Canadian bacon into small squares. Chop chives or green onions. Spread evenly over the bottom of the pie crust.
  3. In a large bowl, whisk together eggs, milk, salt, pepper, and mustard powder. Pour over the onions and Canadian bacon in the pie dish.
  4. Bake for 35-45 minutes (55-65 minutes for a deep dish) or until the eggs are set. The filling should slightly jiggle like jello when it’s done.
  5. Remove from oven and cool for 5-10 minutes before cutting into slices. Serve with blender hollandaise.
To prepare the hollandaise sauce:
  1. Add egg yolks, lemon juice, dijon, to a blender. Close lid and blend until smooth.
  2. Heat butter in a microwave-safe dish until melted, about 30-60 seconds.
  3. While butter is hot, pour into egg yolk mixture in a thin stream while blending. Sauce should thicken quickly.
  4. Serve over warm quiche.
