We Found the Perfect Roller!
Some great culverts were left in our field for the new sprinkling system that is going in. The kids just discovered that these bigger ones fit their bigger bodies much better than the old white one. They spent so much of the afternoon rolling around in them that by the end of the night Cayden couldn't even stand to eat dessert. He said he just wasn't feeling that well. We have a perfect explanation for that!

We are still pretty much failures at our gardening attempts. Dave has tried all sorts of "garden ideas" and has yet to really see the fruits of his labors. I hate to even think of how much money has been put into this thing. Anyway, this year, he is copying the garden plan of a neighbor down the road. Her garden is always amazing. Some of you may want to place bets as to whether ours will be the same!

Some New Dip Ideas
Here are some chip and veggie dips that I've been wanting to post for a long time.
Bacon and Cheddar Dip
1 package cream cheese
1/2 c. miracle whip
1/2 c. milk
Cream these ingredients together.
Add 1 1/2 packages Ranch dressing mix
1 cup cheddar cheese
1/4 cup crumbled bacon bits
Salmon Dip (I love this one)
2 cans salmon or 1 pound baked and flaked salmon
Add
1/2 c. sweet relish
1/2 c. onion finely chopped
1/2 c. mayo
Torrido Dip
2 packages cream cheese (whipped is the best)
1 jar Torridos (these are found by the pickles and hot peppers)
Chop up the torridos and add them to the cream cheese. Add some juice from the torridos and stir together. Chill

Mariah and Abby's First Summer Sleepover
Abby came to Bo's graduation with Grandpa and Grandma Law. Fortunately she was smart enough to pack some "extra" clothes...enough to stay for a week! She even packed a swimming suit. Her plan worked! When she arrived, she and Mariah decided that it would be a great idea to spend a few days together and so they did.
Bo Gets His EAGLE!
It's a great day in the Law house. Bo received his Eagle Scout award today. Who's more excited, him or us? It's a little hard to know for sure. :)
At every Eagle ceremony the scout gets to give his mother and his father an Eagle Parent pin. Now I have two of them! One more to go.
We got to laugh as Dave protested the fact that the "mother" usually does the most to help her son obtain the rank of Eagle. This time, Dave is claiming that title! I will honorably give it to him.
Each Eagle Scout gets to give a special pin to the mentor who helped them throughout his scouting career. This is a well deserved award for Bishop Wallace.
It's a great feeling to pin on that Eagle Scout pin.
Here Bo takes his Scout oath as he is sworn in to be an Eagle Scout.
Finally, Bo gets to share his wisdom with the future Eagle Scouts in the room. He basically told them that there were treats in the other room and they were happy!

Sesame Chicken Pasta Salad
Sesame Chicken Pasta Salad II
Ingredients

1 (12 ounce) package bow tie pasta
* 1/4 cup sesame seed
* 1/4 cup salad oil (canola or other vegetable oil)
* 2/3 cup soy sauce
* 1/2 cup white wine vinegar
* 3 1/2 tablespoons sugar
* 2 cups cooked chicken, cubed
* 1/2 cup fresh parsley, chopped
* 1/2 cup green onion, chopped
* 4 cups fresh spinach leaves, torn
Directions

Boil water, add pasta and cook according to directions.

Drain and rinse pasta with cool water, set aside.

Heat oil on a small skillet over med-low heat. Stir in sesame seeds and cook until light brown.

Remove from heat and allow the pan to cool (or you will regret it!). Stir in soy sauce, vinegar and sugar and stir to combine.

Add cooled pasta to a bowl, pour dressing over the top and mix well. Stir in cooked chicken. There will be a lot of dressing left on the bottom of the bowl- don't worry, it will be absorbed. Cover and refrigerate 3-6 hours, stirring a couple of times. If you skip this step, the dressing will not absorb.

Before serving stir in parsley, green onions and torn spinach and mix well.

Lezlee's Sopapilla Cheesecake
Lezlee brought this recipe on Memorial Day. I loved it and it wasn't even CHOCOLATE! I'll be bringing it to the next family gathering for sure!
Sopapilla Cheesecake
These sweeties puff like sopapillas and are great for breakfast or as a change from coffeecake! Cinnamon sugar can be made by combining 1 cup sugar to 2 TBS cinnamon.
SERVES 12 -20
2 (8 ounce) packages cream cheese
* 2 (8 ounce) packages refrigerated crescent dinner rolls
* 1 cup sugar
* 1 teaspoon vanilla extract or almond extract
* 1/2 cup margarine or butter, melted
* 1/2 cup cinnamon sugar
Directions

Using a 9 x 13 baking pan, unroll one package of refrigerated crescent rolls and line the bottom of the pan.

Flatten.

Mix together the cream cheese, sugar and extract.

Spread over the crescent rolls.

Unroll the other can of crescent rolls and place on top of cream cheese mixture.

Pour one stick of melted butter or margarine over the top and sprinkle with about 1/2 cup of the cinnamon sugar mixture.

Bake at 350 degrees for 30 minutes.
